Rice and Vegetable Casserole

Ingredients:

  • 2 cups cooked rice
  • 1 small zucchini, diced
  • 1/2 cup diced carrots
  • 1/2 cup corn
  • 1/2 cup peas
  • 1/2 onion, chopped
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 cup tomato sauce
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated parmesan cheese
  • Salt, pepper, and oregano to taste
  • Chopped parsley (optional)

Instructions:

  1. Preheat oven to 200°C (390°F).
  2. In a skillet, heat olive oil and sauté onion and garlic until golden.
  3. Add zucchini, carrots, corn, peas, and cook for 5 minutes. Season with salt, pepper, and oregano.
  4. In a large bowl, mix the cooked rice with the sautéed vegetables and tomato sauce.
  5. Transfer to a greased baking dish, top with mozzarella and parmesan.
  6. Bake for 15–20 minutes, until golden and bubbly.
  7. Serve hot, sprinkled with parsley if desired.
