Ingredients:
- 2 cups cooked rice
- 1 small zucchini, diced
- 1/2 cup diced carrots
- 1/2 cup corn
- 1/2 cup peas
- 1/2 onion, chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- 1 cup tomato sauce
- 1/2 cup shredded mozzarella
- 1/4 cup grated parmesan cheese
- Salt, pepper, and oregano to taste
- Chopped parsley (optional)
Instructions:
- Preheat oven to 200°C (390°F).
- In a skillet, heat olive oil and sauté onion and garlic until golden.
- Add zucchini, carrots, corn, peas, and cook for 5 minutes. Season with salt, pepper, and oregano.
- In a large bowl, mix the cooked rice with the sautéed vegetables and tomato sauce.
- Transfer to a greased baking dish, top with mozzarella and parmesan.
- Bake for 15–20 minutes, until golden and bubbly.
- Serve hot, sprinkled with parsley if desired.
