Baked Rice with Sausage and Vegetables

👨‍👩‍👧‍👦 Serves: 4 people

Ingredients:

  • 2 cups cooked rice
  • 200g sliced smoked sausage (like linguiça calabresa)
  • 1/2 chopped onion
  • 1 garlic clove, minced
  • 1/2 red bell pepper, diced
  • 1/2 cup corn
  • 1/2 cup peas
  • 1/2 cup tomato sauce
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup grated parmesan cheese
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Chopped parsley (optional)

Instructions:

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet, heat the olive oil and sauté onion, garlic, and sausage until lightly browned.
  3. Add bell pepper, corn, peas, tomato sauce, and cook for 3–4 minutes. Season with salt and pepper.
  4. In a bowl, mix the sautéed mixture with the cooked rice.
  5. Transfer to a greased baking dish, sprinkle mozzarella and parmesan on top.
  6. Bake for 15–20 minutes, or until the cheese is melted and golden.
  7. Garnish with parsley and serve hot.
