Ingredients:
- 2 cups cooked rice
- 200g sliced smoked sausage (like linguiça calabresa)
- 1/2 chopped onion
- 1 garlic clove, minced
- 1/2 red bell pepper, diced
- 1/2 cup corn
- 1/2 cup peas
- 1/2 cup tomato sauce
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup grated parmesan cheese
- 1 tbsp olive oil
- Salt and black pepper to taste
- Chopped parsley (optional)
Instructions:
- Preheat the oven to 200°C (390°F).
- In a skillet, heat the olive oil and sauté onion, garlic, and sausage until lightly browned.
- Add bell pepper, corn, peas, tomato sauce, and cook for 3–4 minutes. Season with salt and pepper.
- In a bowl, mix the sautéed mixture with the cooked rice.
- Transfer to a greased baking dish, sprinkle mozzarella and parmesan on top.
- Bake for 15–20 minutes, or until the cheese is melted and golden.
- Garnish with parsley and serve hot.
